Instructions

  1. In a medium bowl, toss chicken with 1 tablespoon soy sauce and cornstarch. Let stand for 10 minutes.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add remaining 1 tablespoon vegetable oil to the skillet.
  5. Add broccoli, carrots, bell peppers, and onion. Stir-fry until vegetables are tender-crisp, about 5-7 minutes.
  6. In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce, rice vinegar, sesame oil, ginger, and garlic.
  7. Return chicken to the skillet with the vegetables.
  8. Pour sauce over chicken and vegetables. Stir to coat and cook for 1-2 minutes, until sauce has thickened.
  9. Serve immediately over cooked rice.

Tips & Notes

For a spicier stir-fry, add a pinch of red pepper flakes with the ginger and garlic.
