Instructions
- In a medium bowl, toss chicken with 1 tablespoon soy sauce and cornstarch. Let stand for 10 minutes.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add remaining 1 tablespoon vegetable oil to the skillet.
- Add broccoli, carrots, bell peppers, and onion. Stir-fry until vegetables are tender-crisp, about 5-7 minutes.
- In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce, rice vinegar, sesame oil, ginger, and garlic.
- Return chicken to the skillet with the vegetables.
- Pour sauce over chicken and vegetables. Stir to coat and cook for 1-2 minutes, until sauce has thickened.
- Serve immediately over cooked rice.
Tips & Notes
For a spicier stir-fry, add a pinch of red pepper flakes with the ginger and garlic.
