Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon xanthan gum
  • 6 tablespoons cold unsalted butter, cut into cubes
  • 3/4 cup cold buttermilk

Instructions

  1. Preheat oven to degrees F (degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, salt, and xanthan gum.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter.
  5. Make a well in the center of the dry ingredients and pour in the cold buttermilk.
  6. Stir with a fork until just combined and a shaggy dough forms.
  7. Do not overmix.
  8. Turn the dough out onto a lightly floured surface.
  9. Gently pat the dough into a /-inch thick rectangle.
  10. Fold the dough in half, then pat it down again.
  11. Repeat this folding process more times to create flaky layers.
  12. Pat the dough into a /-inch thick rectangle.
  13. Use a -inch biscuit cutter to cut out biscuits.
  14. Place the biscuits on the prepared baking sheet, about inch apart.
  15. Bake for -minutes, or until golden brown and puffed up.
  16. Serve warm.
