1 pound kielbasa sausage, sliced
2 tablespoons olive oil
1 pound red potatoes, cut into 1-inch pieces
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
salt and freshly ground black pepper to taste

Instructions
Preheat oven to degrees F (degrees C).
In a large bowl, toss kielbasa, potatoes, red and yellow bell peppers, onion, garlic, oregano, and basil with olive oil.
Season with salt and pepper.
Spread the mixture evenly onto a baking sheet.
Roast in the preheated oven for to minutes, or until potatoes are tender and browned, stirring halfway through.
Recipe Notes & Tips
You can substitute sweet potatoes or Yukon Gold potatoes for the red potatoes. Feel free to add other vegetables like zucchini or broccoli.
