1½ cups all-purpose flour, unbleached
1 cup granulated sugar
¼ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
3 tablespoons canola oil or other neutral flavored vegetable oil
1 teaspoon white vinegar
1 teaspoon pure vanilla extract
1 cup water
Frosting of your choice, or confectioner's sugar to dust

Instructions
Preheat the oven to ° F.
Use nonstick cooking spray or shortening to grease an -inch x -inch baking pan.,In a medium bowl, sift or whisk together the flour, sugar, cocoa powder, baking soda, and salt.
Pour this dry mixture into the greased pan.
Spread it into an even-ish layer.,Use the handle of a wooden spoon (or your finger!) to make three holes,Pour oil into the larger hole.
Vanilla and vinegar get poured into the other two holes.
Pour the water into the pan and whisk everything together.,Bake for minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely on a wire rack before frosting or dusting with confectioner's sugar.
