Instructions
- Preheat oven to 450 degrees F.
- Whisk together the flour, baking powder, salt, and baking soda in a large bowl.
- Cut in the butter using a pastry blender or your fingertips until the mixture resembles coarse meal with some pea-sized pieces of butter remaining.
- Make a well in the center and pour in the buttermilk. Stir with a fork until just combined. The dough will be shaggy.
- Turn the dough out onto a lightly floured surface and gently knead 4 to 5 times until it just comes together. Do not overwork.
- Pat the dough into a 3/4-inch thick rectangle.
- Fold the dough in half, then pat it back into a 3/4-inch thick rectangle.
- Repeat the folding and patting process 2 more times.
- Pat the dough into a 3/4-inch thick rectangle one last time. Cut out biscuits using a 2-inch round cutter, dipping the cutter in flour between cuts.
- Place biscuits on an ungreased baking sheet.
- Bake for 12 to 15 minutes, or until golden brown.
Tips & Notes
For tender biscuits, be sure to use cold ingredients and do not overwork the dough. The folding technique creates layers for a flaky texture.
