Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Add red bell pepper, zucchini, and eggplant. Cook until vegetables are tender-crisp, about 8-10 minutes.
- Stir in crushed tomatoes, basil, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- In a large bowl, combine the cooked pasta and the vegetable sauce.
- Pour the pasta mixture into a 9x13 inch baking dish.
- Sprinkle mozzarella and Parmesan cheese over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Tips & Notes
