Instructions

  1. Preheat oven to 425°F (220°C). Generously butter a 10-inch cast iron skillet or oven-safe frying pan.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined. A few lumps are okay.
  5. Pour the batter into the prepared skillet.
  6. Bake for 18-22 minutes, or until the pancake is puffed up, golden brown, and cooked through. The center should be set.
  7. Remove from oven and serve immediately with your favorite toppings.

Tips & Notes

For a richer flavor, you can use half-and-half or heavy cream instead of milk. Ensure your oven is fully preheated for the best puff. Don't overmix the batter, as this can result in a tough pancake.
