- Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, onion powder, and Italian seasoning.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear the chicken breasts for 3-4 minutes per side, until golden brown. Remove chicken from the skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using). Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
- Return the chicken breasts to the skillet. Spoon some of the sauce over the chicken.
- Reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
- Serve the chicken immediately with the sauce.
