Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, toss kielbasa, potatoes, red and yellow bell peppers, onion, garlic, oregano, and basil with olive oil. Season with salt and pepper.
  3. Spread the mixture evenly onto a baking sheet.
  4. Roast in the preheated oven for 30 to 40 minutes, or until potatoes are tender and browned, stirring halfway through.
  5. Serve hot.

Tips & Notes

You can substitute sweet potatoes or Yukon Gold potatoes for the red potatoes. Feel free to add other vegetables like zucchini or broccoli.
