Instructions

  1. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper. Set aside.
  2. Slice the Italian bread horizontally, but not all the way through, creating a hinge. Spread the dressing evenly over the inside of both halves of the bread.
  3. Layer the deli meats and provolone cheese on the bottom half of the bread. Distribute evenly.
  4. Top the meat and cheese with shredded lettuce, sliced tomatoes, red onion, bell pepper, and pepperoncini (if using).
  5. Fold the top half of the bread over the fillings.
  6. Cut the sandwich into individual portions, if desired.
  7. Serve immediately.

Tips & Notes

For the best flavor, let the sandwich sit for at least 15 minutes before serving to allow the flavors to meld. You can also press the sandwich lightly before cutting.
