- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef, onion, and bell peppers. Cook, breaking up the beef with a spoon, until the beef is browned and the vegetables are softened, about 5-7 minutes.
- Drain off any excess grease.
- Stir in garlic, thyme, salt, and pepper. Cook for 1 minute more until fragrant.
- Pour in the condensed beef consommé, ketchup, Worcestershire sauce, Dijon mustard, and brown sugar. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low and cook, uncovered, for 10-15 minutes, stirring occasionally, until the sauce has thickened.
- Spoon the sloppy joe mixture onto the bottom halves of the hamburger buns.
- Top with the other halves of the buns.
- Serve immediately.
Tips & Notes
