Instructions
- In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes, or until foamy.
- Stir in the kosher salt.
- Add the flour, 1 cup at a time, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
- Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Punch down the dough and divide it into 8 equal pieces.
- Roll each piece into a rope about 18 inches long. Twist each rope into a pretzel shape.
- In a shallow dish, combine the baking soda and 4 cups of water. Dip each pretzel into the baking soda solution for 30 seconds, turning to coat.
- Place the pretzels on the prepared baking sheet.
- Brush each pretzel with the beaten egg and sprinkle with coarse salt.
- Bake for 12-15 minutes, or until golden brown.
Tips & Notes
For a crispier pretzel, you can boil them in the baking soda solution for 1 minute before baking. For a softer pretzel, skip the boiling step.
