- In a large bowl, whisk together flour, cornmeal, sugar, baking powder, salt, and baking soda.
- In a small saucepan, melt butter over medium heat. Cook, swirling the pan occasionally, until the butter turns a deep amber color and smells nutty, about 5-7 minutes. Remove from heat and let cool slightly.
- In a medium bowl, whisk together buttermilk, eggs, and honey.
- Pour the browned butter into the buttermilk mixture and whisk to combine.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Pour the batter into a 10-inch cast-iron skillet (or other oven-safe skillet) that has been preheated in the oven.
- Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
