Instructions

  1. In a large bowl, whisk together flour, cornmeal, sugar, baking powder, salt, and baking soda.
  2. In a small saucepan, melt butter over medium heat. Cook, swirling the pan occasionally, until the butter turns a deep amber color and smells nutty, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a medium bowl, whisk together buttermilk, eggs, and honey.
  4. Pour the browned butter into the buttermilk mixture and whisk to combine.
  5. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  6. Pour the batter into a 10-inch cast-iron skillet (or other oven-safe skillet) that has been preheated in the oven.
  7. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let cool in the skillet for 10 minutes before slicing and serving.

Tips & Notes

For a richer flavor, use a dark amber browned butter. Ensure your cast-iron skillet is well-seasoned to prevent sticking.
