Instructions

  1. Marinate the beef: In a bowl, combine the thinly sliced beef with soy sauce, Shaoxing wine, cornstarch, sesame oil, and white pepper. Mix well and let it marinate for at least 15 minutes.
  2. Prepare the noodles: If using dried rice noodles, follow package instructions to rehydrate them. If using fresh noodles, gently separate them.
  3. Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, sugar, dark soy sauce (if using), and beef broth or water. Set aside.
  4. Stir-fry the beef: Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and stir-fry until browned, about 1-2 minutes. Remove the beef from the wok and set aside.
  5. Sauté aromatics: Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and ginger and stir-fry until fragrant, about 30 seconds.
  6. Add noodles and sauce: Add the prepared rice noodles to the wok. Pour the prepared sauce over the noodles and toss to coat evenly. Stir-fry for 1-2 minutes until the noodles are heated through and the sauce has thickened slightly.
  7. Combine and finish: Return the stir-fried beef to the wok. Add the bean sprouts, chopped scallions, and cilantro. Toss everything together until well combined and heated through, about 1-2 minutes.
  8. Serve immediately.

Tips & Notes

For best results, use a very hot wok or skillet to achieve a good sear on the beef and to prevent the noodles from sticking. Ensure all ingredients are prepped and ready before you start cooking, as the stir-frying process is very quick.
