- Marinate the beef: In a bowl, combine the thinly sliced beef with soy sauce, Shaoxing wine, cornstarch, sesame oil, and white pepper. Mix well and let it marinate for at least 15 minutes.
- Prepare the noodles: If using dried rice noodles, follow package instructions to rehydrate them. If using fresh noodles, gently separate them.
- Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, sugar, dark soy sauce (if using), and beef broth or water. Set aside.
- Stir-fry the beef: Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef in a single layer and stir-fry until browned, about 1-2 minutes. Remove the beef from the wok and set aside.
- Sauté aromatics: Add the remaining 1 tablespoon of vegetable oil to the wok. Add the minced garlic and ginger and stir-fry until fragrant, about 30 seconds.
- Add noodles and sauce: Add the prepared rice noodles to the wok. Pour the prepared sauce over the noodles and toss to coat evenly. Stir-fry for 1-2 minutes until the noodles are heated through and the sauce has thickened slightly.
- Combine and finish: Return the stir-fried beef to the wok. Add the bean sprouts, chopped scallions, and cilantro. Toss everything together until well combined and heated through, about 1-2 minutes.
- Serve immediately.
Tips & Notes
For best results, use a very hot wok or skillet to achieve a good sear on the beef and to prevent the noodles from sticking. Ensure all ingredients are prepped and ready before you start cooking, as the stir-frying process is very quick.
