Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, toss kielbasa, potatoes, red and yellow bell peppers, onion, garlic, oregano, and basil with olive oil. Season with salt and pepper.
- Spread the mixture evenly onto a baking sheet.
- Roast in the preheated oven for 30 to 40 minutes, or until potatoes are tender and browned, stirring halfway through.
- Serve hot.
Tips & Notes
You can substitute sweet potatoes or Yukon Gold potatoes for the red potatoes. Feel free to add other vegetables like zucchini or broccoli.
