Instructions
- Cook rice noodles according to package directions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 3-4 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- In a small bowl, whisk together fish sauce, soy sauce, oyster sauce, vinegar, brown sugar, and red pepper flakes.
- Pour the sauce mixture into the skillet with the onions and garlic. Stir to combine.
- Add chicken broth and bring to a simmer.
- Return the cooked chicken to the skillet.
- Add the drained rice noodles and toss to coat with the sauce.
- Cook for 2-3 minutes, or until the noodles are heated through and the sauce has thickened slightly.
- Stir in the Thai basil leaves just before serving.
Tips & Notes
For a spicier dish, add more red pepper flakes. You can substitute other proteins like shrimp or tofu for the chicken.
