Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, honey, and sesame oil. Set aside.
  3. Toss Brussels sprouts with peanut oil and spread in a single layer on a baking sheet.
  4. Roast for 15-20 minutes, or until tender and slightly crispy.
  5. While sprouts are roasting, heat the reserved sauce in a small saucepan over medium heat until warmed through.
  6. In a large bowl, combine the roasted Brussels sprouts, peanuts, garlic, ginger, and red pepper flakes.
  7. Pour the warmed sauce over the sprouts and toss to coat.
  8. Garnish with chopped scallions before serving.

Tips & Notes

For extra crispy sprouts, make sure they are dry before tossing with oil. You can also roast them at a higher temperature for a shorter time.
