- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together soy sauce, rice vinegar, chili garlic sauce, honey, and sesame oil. Set aside.
- Toss Brussels sprouts with peanut oil and spread in a single layer on a baking sheet.
- Roast for 15-20 minutes, or until tender and slightly crispy.
- While sprouts are roasting, heat the reserved sauce in a small saucepan over medium heat until warmed through.
- In a large bowl, combine the roasted Brussels sprouts, peanuts, garlic, ginger, and red pepper flakes.
- Pour the warmed sauce over the sprouts and toss to coat.
- Garnish with chopped scallions before serving.
Tips & Notes
For extra crispy sprouts, make sure they are dry before tossing with oil. You can also roast them at a higher temperature for a shorter time.
