Instructions

  1. Combine water, beer, Old Bay seasoning, salt, lemon halves, onion, garlic, and bay leaves in a large stockpot or Dutch oven. Bring to a rolling boil over high heat.
  2. Add the smoked sausage and potatoes to the pot. Cover and return to a boil. Cook for 10 minutes.
  3. Add the corn to the pot. Cover and return to a boil. Cook for 5 minutes.
  4. Add the shrimp to the pot. Cover and return to a boil. Cook for 3 to 5 minutes, or until the shrimp are pink and cooked through.
  5. Drain the contents of the pot. Discard the lemon halves, onion, garlic, and bay leaves.
  6. Serve immediately, with melted butter, cocktail sauce, and lemon wedges on the side.

Tips & Notes

For a spicier boil, add a few pinches of red pepper flakes to the boiling liquid. You can customize the boil with other seafood like mussels or clams, or add other vegetables like bell peppers or okra. Ensure all ingredients are cooked to their proper doneness. Shrimp cook very quickly, so be careful not to overcook them.
