Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 3-4 minutes per side, until golden brown. Remove chicken from the skillet and set aside.
  4. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  5. Add the minced garlic and cook for 1 minute more until fragrant.
  6. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  7. Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using). Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
  8. Return the chicken breasts to the skillet. Spoon some of the sauce over the chicken.
  9. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  10. Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  11. Serve the chicken immediately with the sauce.
