Instructions

  1. In a large bowl, combine the warm water, yeast, and sugar. Let stand for 5 minutes, or until foamy.
  2. Stir in the kosher salt.
  3. Add the flour, 1 cup at a time, mixing until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  5. Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  6. Punch down the dough and divide it into 8 equal pieces.
  7. Roll each piece into a rope about 18 inches long. Twist each rope into a pretzel shape.
  8. In a shallow dish, combine the baking soda and 4 cups of water. Dip each pretzel into the baking soda solution for 30 seconds, turning to coat.
  9. Place the pretzels on the prepared baking sheet.
  10. Brush each pretzel with the beaten egg and sprinkle with coarse salt.
  11. Bake for 12-15 minutes, or until golden brown.

Tips & Notes

For a crispier pretzel, you can boil them in the baking soda solution for 1 minute before baking. For a softer pretzel, skip the boiling step.
