Gather your ingredients: onions, a knife, freezer bags, and a freezer. It's important to use thick freezer bags to maintain the quality of the frozen onions and minimize odor transfer to your freezer. Consider using a secondary freezer if onion odor is a concern.
Prepare the onions: Peel the onions. Chop or slice them into the size pieces you need for your recipes.
Flash freeze the onions: Spread the chopped or sliced onions in a single layer on a parchment-lined baking sheet. Freeze them until they are solid to the touch, which typically takes 2 to 3 hours.
Portion and store: Once frozen, portion the onions into smaller resealable freezer bags. Using several small bags is recommended over one large bag, as it allows you to use the entire contents of a bag at once. Return the bagged onions to the freezer. Frozen onions are best used within three to six months for optimal flavor retention. To break up clumps that may form, simply bang the bag against a counter before each use.
