1 tablespoon granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon xanthan gum
6 tablespoons cold unsalted butter, cut into cubes
3/4 cup cold buttermilk

Instructions
Preheat oven to degrees F (degrees C).
Line a baking sheet with parchment paper.
In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, salt, and xanthan gum.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter.
Make a well in the center of the dry ingredients and pour in the cold buttermilk.
Stir with a fork until just combined and a shaggy dough forms.
Do not overmix.
Turn the dough out onto a lightly floured surface.
Gently pat the dough into a /-inch thick rectangle.
Fold the dough in half, then pat it down again.
Repeat this folding process more times to create flaky layers.
Pat the dough into a /-inch thick rectangle.
Use a -inch biscuit cutter to cut out biscuits.
Place the biscuits on the prepared baking sheet, about inch apart.
Bake for -minutes, or until golden brown and puffed up.
Serve warm.
