  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed

Instructions

  1. Preheat oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan. 2. In a medium bowl, whisk together the gluten-free flour, baking soda, salt, cinnamon, and nutmeg. 3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy. 4. Beat in the eggs one at a time, then stir in the vanilla extract. 5. Stir in the mashed bananas until just combined. 6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix. 7. Pour the batter into the prepared loaf pan. 8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. 9. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
