Ingredients

  • 1 pound kielbasa sausage, sliced
  • 2 tablespoons olive oil
  • 1 pound red potatoes, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to degrees F (degrees C).
  2. In a large bowl, toss kielbasa, potatoes, red and yellow bell peppers, onion, garlic, oregano, and basil with olive oil.
  3. Season with salt and pepper.
  4. Spread the mixture evenly onto a baking sheet.
  5. Roast in the preheated oven for to minutes, or until potatoes are tender and browned, stirring halfway through.

Recipe Notes & Tips

You can substitute sweet potatoes or Yukon Gold potatoes for the red potatoes. Feel free to add other vegetables like zucchini or broccoli.
