Ingredients

  • Cooking spray
  • 2 cups rice cereal (such as Rice Krispies)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup packed light brown sugar
  • 1/4 cup light corn syrup or honey 
  • 4 Tbsp. unsalted butter
  • 2 Tbsp. smooth peanut butter
  • 1/4 tsp. kosher salt
  • 1 1/2 cups semisweet chocolate chips
  • 2 tsp. coconut oil
  • Mini M&M's, for decorating (optional)

Instructions

  1. Grease the bottom of an " square baking pan with cooking spray and line with parchment, leaving a " overhang on opposite sides.
  2. In a large heatproof bowl, combine cereal and oats.
  3. In a small saucepan over medium-low heat, bring brown sugar, corn syrup (or honey), butter, peanut butter, and salt to a low simmer.
  4. Cook, stirring, until sugar is dissolved, about minutes.
  5. Add sauce to cereal mixture and gently stir to combine.
  6. Transfer mixture to prepared pan, using the back of a measuring cup to firmly press the mixture into the pan.
  7. Refrigerate until bar is cold and set, about hours or overnight.
  8. Using parchment overhang, transfer bars to a cutting board, then slice into bars.
  9. In a small heatproof bowl, microwave chips and oil in -second increments, stirring between each, until melted and smooth, about minute total.
  10. Carefully dip bars so bottoms are coated in chocolate, then place on a parchment-lined baking sheet.
  11. Spoon remaining chocolate into a plastic bag and seal.
  12. Snip a tiny hole in corner of bag and drizzle bars with chocolate.
  13. Decorate with mini M&M's (if using).
  14. Refrigerate until chocolate is cooled and set, at least minutes or up to week.

Recipe Notes & Tips

There are several steps I recommend to make this recipe turn out as perfect as possible. For one, line the pan with parchment or wax paper before you begin to fill it so that it is easy to remove the bars without losing any of that beautiful chocolatey crust. Similarly, before measuring the sticky ingredients like honey or corn syrup, spray your measuring cups with cooking spray. This will help reduce waste. You don’t want to fight to get the whole bar coated in chocolate, so use a bowl wide enough to dip an entire bar easily. Lastly, use the back of a measuring cup to firmly press down on the cereal mixture to compact it. This will help the bars stay together and give a better bite.
