Ingredients

  • 2 lbs. ground beef
  • 1 medium onion chopped
  • 1 large red bell pepper chopped
  • 1 tablespoon minced garlic
  • 2 teaspoon salt
  • 2 teaspoon pepper
  • 2 cups beef broth
  • 1 can crushed tomatoes (28 ounces)
  • 1 can stewed tomatoes (14.5 oz.)
  • 2 cans kidney beans (drained and rinsed)
  • ¼ cup chili powder
  • ½ teaspoon cayenne optional
  • 1 tablespoon cumin
  • 2 cups cheddar cheese for toppings
  • Red onion diced for topping

Instructions

  1. Brown the beef in a skillet.
  2. Drain the fat.
  3. Place in the crock pot.
  4. Add remaining ingredients except for the cheddar cheese and red onion.
  5. Cover and cook on low for -hours or on high for -hours.
  6. Serve with cornbread, top with shredded cheese and onions.
