1 tablespoon olive oil
1 yellow onion, chopped
1 large carrot, peeled and chopped
1 green bell pepper, seeded and chopped
1 pound ground beef
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1 (15-ounce) can tomato sauce
1 (14.5-ounce) can diced tomatoes, undrained
1/4 cup ketchup
2 tablespoons yellow mustard
2 tablespoons soy sauce
2 tablespoons brown sugar
4 cups water
1 pound pasta, such as rotini, penne, or macaroni

Instructions
Heat the olive oil in a large skillet over medium-high heat.
Add the onion, carrot, and bell pepper and cook, stirring occasionally, until softened, about minutes.
Add the ground beef, salt, pepper, and cumin.
Cook, breaking up the beef with a spoon, until browned, about minutes.
Stir in the tomato sauce, diced tomatoes, ketchup, mustard, and brown sugar.
Bring to a simmer, then stir in the water and pasta.
Bring to a boil, then reduce the heat to low, cover, and simmer, stirring occasionally, until the pasta is tender, about minutes.
Serve hot, topped with your favorite sloppy Joe toppings.
