Ingredients

  • 1.5 lbs beef stew meat, cut into 1-inch cubes
  • 2 lbs potatoes, peeled and cubed
  • 1 cup frozen corn
  • 1 cup carrots, peeled and sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Season beef cubes generously with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  3. Brown beef cubes in batches, ensuring not to overcrowd the pot.
  4. Remove beef and set aside.
  5. Add chopped onion to the pot and cook until softened, about minutes.
  6. Add minced garlic and cook for another minute until fragrant.
  7. Stir in tomato paste and cook for minute, stirring constantly.
  8. Add beef broth, thyme, and rosemary.
  9. Bring to a simmer.
  10. Return beef to the pot.
  11. Add potatoes and carrots.
  12. Reduce heat to low, cover, and simmer for -minutes, or until beef is tender and potatoes are cooked through.
  13. Stir in frozen corn during the last minutes of cooking.
  14. Season with additional salt and pepper to taste before serving.
