Ingredients

  • 2 skinless, boneless chicken breasts, cut in half horizontally
  • salt and freshly ground black pepper to taste
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons butter, divided
  • 1/4 cup dry white wine
  • 1/4 cup lemon juice
  • 2 tablespoons capers, drained
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Flatten out chicken.
  2. Season chicken breasts with salt and pepper.
  3. Dredge in flour, shaking off any excess.,Heat olive oil and tablespoons butter in a large skillet over medium-high heat.
  4. Add chicken and cook until golden brown and cooked through, to minutes per side.
  5. Transfer to a plate and keep warm.,Pour white wine and lemon juice into the skillet and bring to a boil, scraping up any browned bits from the bottom.
  6. Reduce heat to medium and simmer until sauce has slightly thickened, about minutes.
  7. Stir in capers and remaining tablespoons butter until melted.,Return chicken to the skillet and spoon sauce over top.
  8. Garnish with parsley and serve immediately.
